Book Friday and Cyber Monday deals are on!

In addition to my last post on books, we are going to be running specials for Book Friday, a.k.a Black Friday, and Cyber Monday. You can find these on my website starting Friday morning through Monday at midnight. Make sure and choose Koch Homestead giveaway when shopping!

Books, books, and more books!

I wanted to take a moment and share an idea that that I have been thinking about!

So last year there was a huge craze about a 25 days of books as a way to count down for Christmas. This year, I will be doing this with my kids. I will have each of my 5 kids pick their 5 favorite books. I am going to wrap them up, without a mark to show whose book it is, and we will open one each night from December 1st through the 25th. I think it will turn out to be a bonding moment as well as a fun surprise!

I am also doing another book giveaway. I am going to do a $50 giveaway in hopes that will encourage someone to start a 25 days of reading tradition in their own home. There are some awesome specials this month:

Summer Reading Challenge

Do you like to read? Well, I am a person who LOVES to read. I have my kids participate in summer reading program through the summer to keep them interested in reading. I also encourage my kids to read every night before bed.

Birthday Celebrations!

In lieu of my 35th birthday today, I wanted to share some life experiences that helped shape me to the person I am today!

1. First and foremost my mom and dad, without them I wouldn’t be here today.
2. Second, my husband. For no matter what we have been through, he is there for me no matter what!
3. My sisters and brothers, I love them to infinity and beyond and can’t even begin to say in words what they mean to me!
4. My friends. What else can I say! Friends are what keep life interesting. Friends are there when you need them and when you want them.
5. My kids. I have been abundantly blessed with 5 kids who I see every day and cannot imagine my life without them. I also have 2 angels that I think about often. Even though I never saw them, they still belong to me!
6. My home! I have a wonderful home with an abundance of land.
7. My animals. My kids only have 2 cats and a fish but we also have our own laying hens for which we use the eggs and we raise our own meat chickens.
8. My backyard. We have approximately 40 acres in which we are able to freely roam and enjoy!
9. My vehicle! Without my vehicle I wouldn’t be able to get anywhere. I live in the sticks and the closest grocery store is 20 miles away.
10. My faith!

I am sure that I have many more but I will finish with those. Onto the lighter side of things! Stay tuned for some great summer grilling recipes. These wil be updated in the next few weeks! Happy Spring!

Taco Stuffed Pasta shells

This is a total experiment.  I have such rave reviews on my regular Stuffed Pasta shells recipe that I thought I would try to make a new variation.  I love Mexican food and I love pasta so we will see how this turns out.  My cooking class coming up this week is making this one.  I hope it is a new favorite!

1 lb hamburger
1 tsp salt
1/2 tsp pepper
1 pkg taco seasoning
3/4 cup water
1/2 cup taco cheese
1/2 cup cheddar cheese
1 box Jumbo pasta shells
1 jar taco sauce

Start by parboiling the jumbo shells until pliable.  Meanwhile, combine the hamburger, salt, pepper, taco seasoning, water, and taco blend cheese and mix well.  Stuff meat mixture into shells and place in an 8X8 pan.  Cover with taco sauce and top with remaining cheddar cheese.  Cover, label and freeze.

Cooking day instructions:  Thaw completely.  Bake in 350 degree oven, covered, for 1 hour.  Remove cover and heat another 10 minutes.  Serve with favorite taco sides.

 

 

 

 

 

 

 

 
 
 
 
 
 
 
 
 

Beef Stir Fry

Even my kids like this one.  This is a simple one to buy the meat when it is on sale and place in the marinade right away.  Then all you have to do is thaw, heat an then add your vegetables.

 

1 lb boneless sirloin, trimmed of all visible fat
3 Tbsp Soy sauce
1 Tbsp grated gingerroot
1 tsp Worchesteshire sauce
1 tsp dried oregano
1/2 tsp ground cumin
1/2 tsp sesame oil
2 cloves garlic, minced
1/2 medium Vidalia onion, cut into large chunks
1-16oz bag Stir fry vegetables

Trim the meat of any visible fat.  Cut into small strips.  Combine the remaining ingredients except the vegetables.  Place the meat in the marinade.  Place in freezer bag or container and freeze.

Cooking day instruction:  Thaw meat completely.  Place about 1 Tbsp of olive oil in pan and bring to medium high heat.  Place meat into hot oil (careful not to splash on yourself).  Cook until meat is done and then add your vegetables.  I prefer to have the vegetables tender crisp.

Serve with rice and a side salad for a complete meal!
